Ingredients

  • 1 lb 450 g ground chicken – fresh, not frozen
  • ½ cup breadcrumbs plain or panko
  • 1 large egg
  • 2 tbsp milk
  • ½ small onion finely grated
  • 2 cloves garlic minced
  • ¼ cup Parmesan cheese
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil for cooking or brushing

Method

Mix Ingredients:
  1. In a large bowl, combine ground chicken, breadcrumbs, egg, milk, onion, garlic, Parmesan, parsley, salt, and pepper. Mix gently until combined — don’t overwork it.
Shape Meatballs:
  1. Roll mixture into 1½-inch balls using oiled hands or a cookie scoop. Place on a parchment-lined tray.
Cook (Choose One Method):
  1. Oven: Preheat oven to 400°F (200°C). Brush meatballs with olive oil and bake for 18–20 minutes, flipping halfway.
  2. Skillet: Heat olive oil over medium heat. Cook meatballs for 10–12 minutes, turning occasionally until golden brown and cooked through.
  3. Air Fryer: Preheat to 375°F (190°C). Air fry for 12–14 minutes, shaking halfway through.
Optional – Add Sauce:
  1. Toss cooked meatballs in marinara, BBQ, or creamy garlic sauce. Simmer for 5 minutes to absorb flavor.

Notes

  • Use ground chicken with some fat (not 100% lean).
  • Grate your onion for extra moisture.
  • Don’t overmix — gentle mixing keeps them soft.
  • Check for doneness at 165°F (74°C) internal temperature.
