Mix Ingredients:
- In a large bowl, combine ground chicken, breadcrumbs, egg, milk, onion, garlic, Parmesan, parsley, salt, and pepper. Mix gently until combined — don’t overwork it.
Shape Meatballs:
- Roll mixture into 1½-inch balls using oiled hands or a cookie scoop. Place on a parchment-lined tray.
Cook (Choose One Method):
- Oven: Preheat oven to 400°F (200°C). Brush meatballs with olive oil and bake for 18–20 minutes, flipping halfway.
- Skillet: Heat olive oil over medium heat. Cook meatballs for 10–12 minutes, turning occasionally until golden brown and cooked through.
- Air Fryer: Preheat to 375°F (190°C). Air fry for 12–14 minutes, shaking halfway through.
Optional – Add Sauce:
- Toss cooked meatballs in marinara, BBQ, or creamy garlic sauce. Simmer for 5 minutes to absorb flavor.
Notes
- Use ground chicken with some fat (not 100% lean).
- Grate your onion for extra moisture.
- Don’t overmix — gentle mixing keeps them soft.
- Check for doneness at 165°F (74°C) internal temperature.
