Prepare the Chicken:
- Trim excess fat and season the chicken with salt, pepper, garlic powder, onion powder, and optional paprika.
Add to Instant Pot:
- Pour in chicken broth and place seasoned chicken inside the pot.
Pressure Cook:
- Cook on High Pressure for 10–12 minutes. Use Quick Release or Natural Release depending on the size of the breasts. Ensure internal temperature reaches 165°F (75°C).
Shred the Chicken:
- Remove chicken and let rest 5 minutes. Shred using forks or a hand mixer.
Mix with Juices:
- Return shredded chicken to the pot to absorb cooking juices.
Serve:
- Use in tacos, sandwiches, salads, casseroles, or meal prep bowls.
