Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 3 tbsp adobo sauce from chipotle peppers can
  • 2 –3 chipotle peppers in adobo
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp white vinegar
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: pinch of sugar for balance

Method
 

Prepare the Marinade
  1. Add chipotle peppers, adobo sauce, garlic, cumin, oregano, paprika, lime juice, vinegar, and olive oil to a blender.
  2. Blend until smooth and thick.
Marinate the Chicken
  1. Place chicken thighs in a large bowl or zip-top bag.
  2. Coat with the marinade, ensuring all pieces are fully covered.
  3. Marinate for at least 2 hours, or overnight for best flavor.
Cook the Chicken
  1. *.Grill Method
  2. Preheat grill to medium-high.
  3. Cook chicken for 4–5 minutes per side, until charred and cooked through.
  4. *.Cast-Iron / Stovetop Method
  5. Heat skillet until very hot.
  6. Sear chicken on each side until deeply browned.
  7. *.Oven Method
  8. Bake at 425°F (220°C) for 18–20 minutes, flipping halfway.
  9. *.Air Fryer Method
  10. Cook at 400°F (200°C) for 12–14 minutes.
Chop and Serve
  1. Let the chicken rest for 5 minutes, then chop into small bite-sized pieces — just like Chipotle.
  2. Serve in bowls, tacos, salads, burritos, or meal-prep containers.
